Today, 31 May, the doors of Madrid Fusión, the renowned International Gastronomy Congress, open today at Ifema. The event will be held until June 2nd included, and will give prominence to "Circular Gastronomy", a global concept that is based on sustainability.
In this 19th edition, Eating in Ibiza will represent the gastronomy of the island of Ibiza, in a presentation "From the sea of Ibiza", led by two great chefs:
- Óscar Molina, executive chef of the restaurant La Gaia, at the Ibiza Gran Hotel, awarded with two Repsol suns.
- Álvaro Sanz, executive chef and founder of the restaurant Es Tragón, awarded one Michelin star and two Repsol suns.
The presentation will begin today, Monday 31 May, at 13:30 in the Sala Polivalente in Madrid with a brief presentation of Eating in Ibiza, the Club de Producto de Fomento del Turismo, which brings together the main hotel and catering companies on the island, with the aim of promoting local produce and the wide variety of gastronomic offerings that Ibiza has to offer.
To continue, attendees will be able to witness the preparation of different dishes related to the sea of Ibiza, prepared by the two chefs.
The event, which has been promoted by Fomento del Turismo de Ibiza and financed by the Consell de Ibiza and Ibiza Travel, aims to promote Ibiza as a benchmark for international gastronomy in Spain, as certified by the 24 Michelin stars held by several chefs working in the island's kitchens.
Our work is focused on making Fomento del Turismo de Ibiza an increasingly open forum for debate that draws together a wide range of interests, agrees strategies and stimulates professionals, workers, companies and organisations from all the island's economic and social spheres to benefit from membership.
We want Fomento de Ibiza to be an open forum for debate, one that agglutinates common interests, reaches a consensus as to the strategies that should be followed, and encourages professionals, workers, companies and entities from all the island’s economic and social walks of life to work together
Fomento del Turismo de la Isla de Ibiza (Island of Ibiza Tourism Development) is an association founded by a group of forward-looking people who set themselves the task of stimulating, promoting and developing the island's budding tourist industry.
